What does nose-to-tail mean?

Nose-to-tail eating is the philosophy of using every part of the animal in food preparation, letting nothing go to waste

The concept of nose-to-tail philosophy is becoming more and more popular. It is the philosophy of using every part of the animal in food preparation, letting nothing go to waste. Aside from its appeal as a more traditional diet, it’s also one of the most economically and environmentally friendly ways to work with and consume meat.

Why nose-to-tail?

Sloane’s Porchetta de Testa. A cured and rolled pigs head with rosemary and garlic, slowly poached and sliced

There is a vast array of vitamins and minerals in organ meats such as liver, heart, kidney, and spleen that you just can’t get from eating muscle meat alone.  Some people even refer to these types of food as nature’s multivitamin. These items are the true “superfoods” that have allowed humans to thrive throughout history.

True nose-to-tail eating takes advantage of the bones and bone marrow, too. It comes as no surprise that their consumption is beneficial to the health of our own connective tissues and bone strength.

Bone broth and marrow give us access to the collagen, healing amino acids, and also many bio-available minerals such as calcium and magnesium.

Steak n Kidney Pie

We incorporate a nose-to-tail approach as part of our efforts to minimise waste. Sloane’s now produces a large range of high quality meat products from the best, ethically sourced and also local ingredients. We respect the very animal whose life we’ve taken to sustain ourselves.

Our products

Sloane’s Dog Bone

We utilise the bones to make soups, stocks and broths. Our Chicken Broth is made from our naturally raised chickens, which are free of hormones and antibiotics. The same is also done with our Beef Stock.

Furthermore, we also use a pig’s head for Porchetta De Testa and kidney for Steak N Kidney Pie. At Sloane’s, we make use of the whole animal, down to the very bone, playing a small but nonetheless important part in the way forward of sustainable eating.

In addition, we also produce a range of dog food using typically discarded parts of animals that aren’t otherwise used in our products. Everything comes from the same standard of high welfare animals we use for the usual ‘human’ food, but made for our canine friends.
