Chalomjai is a unique fresh mold-Ripened cheese made with raw milk from Ratchaburi and Pakchong area.
Though similar to a good runny Brie or Camembert, Chalomjai is made following a unique recipe. Inoculating the milk with yogurt and cultures, before ripening the curd for at least two weeks until consumption.
Chalomjai is wrapped in a traditional Thai basket woven with bamboo, called chalom, to which it owes its name.
